But other than these delicious meals we’re used to, there are lighter and more creative plantain recipes we’ve either never tried, or known to exist.

Plantain and Black Bean Salad:
Black bean salad is a very popular and very healthy dish on its own. Combining some of the most nutritious ingredients around such as beans, avocado, cucumber, and mixed greens, it stands out as one of those rare dishes that manages to taste great without sacrificing any health benefits.
The addition of fried plantain takes the taste to a whole new level. Enjoy this one as a First course or on its own – whatever works for you is good!
Here’s what you’ll need to prepare Plantain and Black Bean Salad:
Ripe plantains, oil, black or kidney beans, tomatoes, red onion, coriander, mint, salt green onion/scallion, bell pepper, cucumber, kpakpo shito, avocado, lime juice and baby spinach/arugula or your favorite mixed greens for serving.
Green Plantain and Shrimp Swahili Curry:
Curry dishes originated and are very popular in India, but has since spread all around the world. Shrimp curry is especially popular, and after tasting it once it’s not difficult to understand why.
Adding plantain to this recipe adds a uniquely local taste to this dish. Enjoy it with cooked rice.
Here’s what you’ll need to make Plantain and Shrimp Swahili Curry:
Onions, Oil, Garlic cloves, Star anise, Cumin, Ground fennel seed, chilli flakes, turmeric, tomatoes, garam masala, Coconut milk, green plantain, shrimp/prawns, coriander, Lime zest (lime peels) and Juice of limes.
Everyone loves pie. Few dishes throughout history have proven to be as versatile and as tasty as pie. There are many different types of pie made with many different types of ingredients, and plantain pie is one that you simply have to try.
Enjoy a slice of this delicious dish after meals, or – if you have a particularly sweet tooth – eat it all on its own.
Here’s what you’ll need to make Plantain Pie:
Ripe plantains, ground cloves, ground cinnamon, pure vanilla extract, ground nutmeg, brown sugar, butter, evaporated milk, eggs and pie crust.
