Seafood Jollof
Jollof is one of the most popular dishes in West Africa, and especially in Ghana. It is a dish that can be served in just about any occasion. It’s made from a base of rice and tomato sauce. While traditionally prepared with fish or meat in Ghana, we decided to mix it up and throw in some seafood.
INGREDIENTS

Rice – 400g

Oil – 3 Ladles

Pepper – 1 tsp.

Salt – Enough to taste

Onion – 1 Medium

Ginger Mix – 1 tsp.

Curry Powder – 1 tsp.

Onga – 1 tablet
-
Tomatoes – 200g
-
Tomato Paste – 100g

Shrimps – 150g
-
Octopus – 200g
DIRECTIONS

Boil the octopus with a little salt on it for 5 minutes

Once it becomes tender, fry it together with shrimps.

Put oil on the fire and fry the chopped onions for 2 minutes.

Add chopped tomatoes, tomato paste, pepper and seasoning and allow it to cook for 10 minutes.

Add fried octopus and shrimps to the sauce and stir.

Add the rice to the stew and leave it for 25 – 30 minutes for it cook but constantly stir to prevent burning

Once the rice is cooked, the Jollof is ready for you enjoy.
