At Koala, we love collaboration because it gives us a chance to explore, enjoy and discover new experiences. Recently, we worked together with the French Embassy to host the famous brand Elle & Vire.
Founded in Normandy, Elle & Vire has been in the dairy business since 1945. Specializing in cheese, butter, cream and so much more, Elle & Vire is present on 5 continents in over 120 countries. We had a chance to taste some their delicious creations through the event “A French Touch Around the World.”
In action was chef Ludovic Chesnay, an international culinary advisor who has been in the business for over two decades and has worked in Germany, Switzerland, Australia, Dubai and more. Some of the delightful desserts on display was the Mogador Ganache – a passion-fruit cake pop dipped in dark chocolate – the shortbread pastry – a buttery, wholesome treat – and orange rich shortcrust dough – a zesty, creamy snack.
It may be hard to believe that so many hearty and rich treats can be made with dairy but chef Ludovic showed that all it takes is a little creativity and imagination.To bring some adventure to your kitchen, we’ll share some of the wonderful recipes we had the joy of tasting.
1. Mogador ganache
50g passion fruit puree
90g inverted sugar
70g dark chocolate
17g Elle & Vire Professionnel Gourmet Butter Unsalted
Bring the fruit puree/inverted sugar to the boil and gradually pour onto the chopped chocolate. Make sure the temperature of the mixture does not exceed 40 Celsius. Add the chopped butter. Pour into 2cm diameter flexipan moulds and chill in a freezer.
24g Elle & Vire Professionnel Extra Dry Butter
Fine grain salt
6g ground almonds
47g bread flour
Combine all the ingredients and refrigerate. Roll the dough out to a thickness of 2.5 mm then cut out using a 3.5 mm diameter pastry cutter. Bake in the oven at 150/160 Celsius for 12 mm.
3.Orange rich shortcrust dough
100g sieved flour
40g icing sugar
55g Elle & Vire Professionnel Gourmet Butter Unsalted
10g orange zest
Combine the softened butter and icing sugar. Add an egg and mix in well. Put the flour and orange zest in. Make the dough. Keep in the fridge for 2 hours before rolling out to 2.5 mm thickness. Cut out using a no.6 cutter. Oven bake on a baking mat for 15 mins at 145 Celsius.
