Bread is pretty much the humble cornerstone of any household and while we assume that it is the first thing we all run out of in our kitchen, sometimes it’s left to go stale. Here’s a twist to the popular bread and egg delicacy Ghanaians know and love. Stale bread lends itself well to soaking up flavours and not turning to mush at the first hint of moisture. To make this breakfast special, drench slices of bread in a bowl of whisked egg, vanilla extract (and/or cream) and pan fry each side of the bread for about a minute. French toast is best enjoyed with a topping of maple syrup.
Breadcrumb Toppings
Liven up baked fish or meatballs with a crisp breadcrumb topping. It’s quite simple, tear up your bread into little pieces and sieve till you attain fine grains. Before baking fish or deep frying meatballs, sprinkle breadcrumbs over them or gently dab them in the crumbs to add a little bit of crunch to them.
